Going Coconuts!

This week Joanna made another recipe from the lovely Isa Chandra Moskowitz. You can find more of her stuff here, this recipe is from her new cookbook, The Superfun Times Vegan Holiday Cookbook. Since the recipe book is new Joanna’s been eagerly checking up for recipes to make and post!

Let’s get to the recipe itself! The pie is a coconut cream pie – it tasted just like a bounty bar but in pie form. Those little chocolate treats were my favorite when I was a kid during long road trips, so we were super eager to make this thing!

The crust is made of matzah bread, which is basically Jewish bread without yeast – it is very dry, but works perfectly as a base for any baking needs when crumbled up. The actual flavor of the pie comes from the coconut milk and cashews, which come out creamy and sweet – SO decadent J

The contrast between the chocolate ganache and the coconut filling was perfect – and it kept the pie really light and not too overpoweringly sweet. This came out amazing, can’t wait to bake up more stuff from the new cookbook!
