First things first to getting back on track of our schedule and our fitness; oatmeal-raisin cookies! These are from Chloe Coscarelli (aka @chefchloe), from her book Chloe’s Vegan Desserts. Cookies have always been a favorite to make, they’re almost therapeutic at this point. Anyway, these are a continuation of last week’s health kick – and packed with energy to make for the perfect snack!
When it comes to flavors, I love oatmeal-raisin cookies with cinnamon in them. They remind me of a rainy-day nibble, something to hold you over before dinner that goes well with a cup of tea or milk. These came out of the oven gooey, and developed a nice crunch once they cooled, while the inside remained soft.
